You point out the biggest difference already. The Sony A7RIII is much smaller and lighter than the Canon. It renders a very sharp still and video although I prefer the color science of Canon over Sony. This is not an issue if you shoot at a neutral picture style, tune details and grade them in post. Renting both with your target everyday lens would be a good idea to see what life is really like with each camera. With 2-3 good lenses both are a sizable investment. Built-in image stabilization is only good for some shots and does not replace the need for gimbals in film making. Canon IS lenses work pretty well too. Both cameras have 4K. Good luck!
