Damn it--I have to confess to the same thing! I have a block full of task specific knives but I automatically go for the big gun every time. Oddly, my girlfriend/worst nightmare, is partial to a petite little serrated steak knife and refuses to use anything else. If she was butchering a 400 LB moose, that's the knife she'd chose.

RayFExactly. Maybe it's just because I'm a novice in the kitchen, but I really don't need too many choices.
