5.5inch utility knife hand-forged by Mutsumi Hinoura. Uses an aogami super carbon steel core and is the sharpest knife I have ever used/owned. I love it for everything from slicing tomatoes to butchering a chicken.

I just bought a couple of Hitachi SLD steel kitchen knives. A Guyoto and a Nikiri. They aren't quite as nice as my Blue Steel , Aogami, pair from another company, but both sets seems to be really great for their designed usage. I really love these things and would like to have some more different steel sets, like this knife looks intriguing for example. Even though it's the same Aogami steel that I use now, the hardening process will make a big difference sometimes. I want to try Cowry X, but it's cost prohibitive I do believe. Super Gold Powder Steel is on my list as well.
