My three go to knives, 8" Shun Classic, 8" Kramer by Zwilling, and Mac 6.5" Vegetable Cleaver.

Edit: my vintage v. sabatier 12" high carbon chef's knife. I love the flatter profile of the french knives versus the modern full bellied german style. 8" Kramer for comparison.
