Too Many Potatoes

Our neighbors on both sides have farmer relatives, and they each gave us a big bag of potatoes. After two giant batches of potato salad I'm looking for other ways to use a lot of potatoes. Any suggestions?

Au gratin. I make and freeze it uncooked with just the potatoes and cheese then add the cream when I’m ready to bake it. Since there are only 2 of us, I use small, dinner for two size, pyrex glass dishes that go from freezer to oven.

Surprised this wasn't commented (or maybe I didn't notice). But why not gnocchi? Whenever there's too much potatoes I par boil them, either make diner style fries for the morning or gnocchi for lunch the next day

I once tried to buy one of those high torque wet-dry Indian spice grinders, but the only North America's distributor for the main brand was in Canada, and they had just gone belly up. Now I use an inexpensive coffee grinder, but only for, cumin from seeds and Sichuan pepper.

CloacaThe Indian wet grinders really aren't intended for spices per see (not unless you're doing kilos at a time). Where they really excell is making rice./bean batters for dosa, idli, and the like. They also work really well for hmmus, various types of nut butter, (Mexican) mole, and Thai stle curry pastes. I know that some people use them for processing chocolate as well.
I also use a coffee grinder for spices, but I got through enough of them that it was worthwhile to get a burr style grinder rather than one with the spinning blades of death.

Deep fried cheese puffs. Cook and mash them, wrap a glob around a chunk of cheddar cheese and optionally some pepper jack, roll it in panko then toss it in a skillet with some sunflower oil heated to ~375F. Chipotle mayo for dip.

KadosThis is basically croquettes/korokke, but with cheese in the middle. I may try that.
baked potatoesssssss
wash em stick em with a fork a few times rub some canola oil on em toss salt on em bake em at 350 until crispy delicious
have em hot, or wrap in foil and eat as an on the go snack later
