For kitchen knives, how would the blade profile and the Rockwell hardness affect the angle at which to sharpen them as well as the grit requirements?

The harder the knife the steeper the angle you can achieve without having issues with rolling the edge. The "grit" requirements are unlikely to change significantly, as those are based on how dull the knife is rather than the profile. I always finish on the same grit size regardless of the knife. Whether a finer or toothier edge is better depends on the steel, not the profile or hardness.
