I prefer fountain pens that represent good value, so I'm very, very unlikely to buy a pen that seems to be desk or pocket jewelry. I also use my pens, so I'm not looking for collector's items that will sit in a display case. Very few modern pens offer really usable flexible nibs, and for styles of writing that require that I would use a fountain pen from before the '40s or so, or I would use a dip pen with the appropriate nib. Other than flex nibs, the material a nib is made from doesn't really matter in most cases, so I prefer to save money and buy stainless steel nibs. I know how to smooth and otherwise work on nibs myself, so I just need a decently made nib with good tipping and I can get a pen to write the way I want. I'm not really that excited about cartridge/converter pens. I would rather have a different filling method, and I do find unusual fillers to be interesting. However, after having bought a few pens with interesting filler mechanisms, I've found that this isn't enough to make me keep using a pen unless it's really good in other ways too. I live in the US, and for new pens I would like to buy pens made in the US when possible. I also prefer new pens that come with a long or lifetime warranty. It's important to me that a manufacturer is confident enough in their product to be willing to stand behind it for at least 5 years. I do like pens with a window to see the ink level, and demonstrators are also good in this respect. I want a pen that I can write with on a daily basis and am not afraid to take out of the house. I also want it to hold enough ink that I'm not forced to fill it every day or carry around a bottle of ink with me. I want a pen that will last a long time, and be repairable if something happens. I like to recycle and do things to protect the environment and reduce my impact on it. Vintage pens are actually really attractive for this, although getting a good modern pen that will last is ok too.
