That Victorinox. I've got some really nice steel in my knife roll, but if you were to catch me cutting anything at work, it would be safe to bet that I have an 8" Victorinox chefs knife in my hand. It takes a shaving-sharp edge without tons of work or stones, is light enough for hours of veg prep and inexpensive enough that when Johnny Newbie walks by your station and clumsily knocks it on the floor and breaks the tip, you can simply carry on with your night without stewing over your broken knife. If it makes the drop, I'll be buying another one (which will be my 5th!)

AWDuckI have it for over two years and it's taking the abuse and easy to resharpen (not very amazing edge retention tho). This is definitely a working horse and a pleasure to use.
