Named after a legendary 16th-century Japanese samurai, Kanetsugu Saiun Damascus Kitchen Knives are handcrafted in Seki City—the cutlery hub of Japan. Each knife in the set is made from a cobalt VG-10 steel core that is forged with 33-layer Damascus. The convex Hamaguri-ba edge geometry delivers impressive cutting performance for a variety of kitchen tasks. The handle is made from smooth, wood-grain black linen micarta, which is resistant to water and changes in temperature. The scales are secured with flush stainless steel bolsters for a smooth grip. A thin red microfiber spacer adds a hint of color to complement the overall aesthetic.

Designed for a natural cutting motion, this small knife allows users to work without their fingers hitting the cutting board, making it an excellent choice for cutting up herbs, vegetables, and small foods.
Slightly larger than the Paring Knife, the Petty Knife has the same design, but can handle more heavy duty kitchen work. Use it for larger vegetables and small cuts of meat.
The Santoku features a deep-bellied blade with a long curve for chopping. The blade’s shape makes chopping large quantities of food quick and easy, and its wide handle helps to maintain a steady grip.
With a nearly 8-inch tapered blade, the Gyuto makes quick work of a wide range of cutting tasks. It’s great for tearing through large cuts of meat and thick-skinned veggies like butternut squash and potatoes.
The largest in the collection, the 9-Inch Gyuto excels in tough kitchen tasks. Use it to rip apart ribs, pork chops, and tough fruits like pineapple and watermelon.
