I got interested in this paring knife in particular, because it has a nice small size. I happen to have a Dalstrong paring knife, which is 3.75" in size. I am finding that it is useful as a small utility knife, but not as a paring knife, because 3.75" is too large. The point is that for close in tasks, like digging the sprouts out of a potato, or peeling a boiled potato, you want to be able to hold the paring knife so that your thumb opposes the tip. For that reason, I conclude that 2.5"to 3.5" is the range for paring knives. Anything above that is a small utility knife, and better on the board than off. With Kanegetsu the paring knife is 3.15" and that is ideal. What they call the petty knife is 4.7" which is a perfect size for a small utility knife.
