Tried to search what Sandvik Stainless Steel compositions are. They could be either, 12C27 or 12C27M. https://www.materials.sandvik/en/products/strip-steel/strip-products/knife-steel/sandvik-knife-steels/ I would guess that they are the higher carbon 12C27 -which is a bit higher HRC (54-61)- but still a chromium steel that resists patina.
