The vestibules are very generous - perhaps the most of any solo tent and extremely useable since they are quite tall. Each of the two vestibules measures 100" along the long edge of the tent, 34" along the short edge of the tent and 105" along the hypotenuse. Between the two vestibules you've got about 24 square feet of area.
Yeah you can have the door zip partially open and still roll up the door. I'm not sure if it quite reaches with the door zip at halfway but for sure with the door zip 2/3rds open you can secure it via the normal rolling up method. Since the fly over hangs the inner by several inches even with the door zip entirely open and the door rolled up, having the door zip 2/3rds open and rolled up would provide plenty of overhang to conduct tasks like cooking in the vestibule in a moderate storm.
