Have you pitched this on granite or other surface that didn't allow stakes? Is it fairly stable if you need to tie the corners of the fly to rocks or logs?

Yes it is stable if you tie the corners to rocks/logs/trees etc, provided these items are stable themselves. Obviously tying off to some tiny rock isn't going to work so well. The tent is only going to be as stable as the items that it's anchored to. Last weekend in the alpine I could only use a couple stakes, so I tied out parts of the shelter to boulders and that worked well.
Any trekking pole based shelter requires connection points to the ground (usually stakes) so these shelters are more challenging to pitch if you can't use stakes. The X-Mid is as good as possible here since it only requires 4 stakes (some shelters need 8 - 10 to be fully pitched) but yes it could be a bit of a hassle on granite to find a few large rocks to tie to. If you anticipate that being a regular use for you, then you may prefer a freestanding tent. I find that even in the alpine I can almost always find some dirt to stake to, and that's nicer anyways since it's softer than bare rock.
