So the big selling point for this is the fine-tuning of the temperature range? Looking around it seems like there are a number of induction units that sell for $250 or less with the same wattage and maximum temperature capability but may only have a dozen or so temperature settings. Seems like a steep price to pay just to be able to dial in exactly the temperature you want to the degree, but I suppose it could be useful for countertop deep frying or sugar work.

tutetibiimperesI've tried several and I can tell you that nothing out there comes close. Not only is the temperature tracking SUPER precise... you can also very directly control the ramp up speed. With any of those cheap cooktops, IF they can track the temp well (which they can't), you'll have huge overshoot in temp before it settles. With the Breville you can set it to ramp up slow, med, fast and it will not overshoot (at slow). I've cooked hollindaise sauce on this and literally have tested walking away from both the warmed egg yolks and left the sauce sitting on the stove for over a half hour with zero curdling. I really can't express how amazing this thing is if you want an induction cooktop that is capable of high heat and precise control and can go to VERY low temps (down to 68 degrees. Makes melting chocolate easy peasy. Like I said above I spent 1800 for mine and have not regretted it at all. I also just ordered a second one via this drop just now. :)

SantiagoDracoWhat's the noise level like on this unit? I have a commercial grade 1800 watt burner and the fan is extremely noisy. Wouldn't be bad in a restaurant kitchen but here at home it's annoying, expecially for long slow simmers.

ndpandaIt depends on what temp you are cooking at. First I should point out, that unlike the cheaper units, you really don't hear any of the "pinging" from the induction unit itself. Maybe slight but very little. The main sound you will hear are the fans if they kick off due to high heat cooking. They are definitely audible but not loud or noisy. I would almost say negligible. If you heat oil to say 375, or a fry pan to 450, the fans will run continuously. But while they are noticeable it's not in a bad way. I have had this thing making stock all day/night and the kitchen is open plan next to the living room. No issues or distraction at all. You really cannot go wrong with this unit especially at the price. It's that good.

ndpandaYou're welcome. I'll have two after this one ships and don't see even two of them running with fans at full speed (which btw only happens when using high heat) as being an issue in an open plan environment.
