Sakon Ryuga Gyuto Knife
High-Speed Steel in a Do-It-All Shape
The gyuto knife can do it all. It has a tall heel for chopping, a wide belly for rocking cuts, and a fine tip for detail work—all reasons it’s so popular in modern kitchens. The Sakon Ryuga variety is made from powdered high-speed steel that’s hardened to a remarkable 64 on the Rockwell scale. With such a high hardness rating, it’s designed to sustain a sharp edge with very infrequent sharpening. If you do want to sharpen it yourself, there are plenty of stones to choose from at checkout. The outer layers of SUS405 steel make it easier to get a keen edge when sharpening. Constructed with a compressed wood handle, the knife supports all kinds of grips, but we recommend a pinch grip for best results.
