japan, i used to work cruise ships as a cook in the galley. all the top European chefs used Global knives. they were the sharpest available and only one bevel ,if i remember correctly. and steel handles so no contamination such as wood absorption or plastic being porous. expensive but very well manufactured, designed and hardened-for sharpness. if i remember you have to order for right or left handed use. the single bevel is always on the other side of the flat side and the flat side is always against your food holding hand. i have used them and they are balanced to perfection

I meant on the drop site! They are the only knives I use! I love them!
