100% agree - most reviews favor the anova > joule. Joule gets design points, but ultimately sous vide is about the functionality of the equipment for producing the food you want (imo).
Major selling point for me between the Joule and Anova Wifi was the flexibility of the Anova. The standard clamp has a larger range, which makes it easier to attach to things like coolers (which provide better thermal efficiency, meaning faster heating, lower energy use, less heat going out into the room), while the Joule requires the purchase of an accessory clamp to achieve the same range. Anova's ice-bath mode is also a huge plus for me, as well as having a screen and the ability to set the temperature manually without needing to stop what I'm doing to grab my phone and program it via the app. The Joule app is better and has some great recipes, but you can use those recipes without buying the device.
