This drop comes with two knives, the 8-inch chef’s knife and the 4-inch paring knife. The chef’s knife features a blade made from Nitro-V: a premium heat-treatable steel, which, in this case, has been hardened to an impressive 61 on the Rockwell hardness scale to hold its edge over time. The paring knife is made from a similar steel in AEB-L, which has been praised by custom knifemakers for its use in razor blades. Both knives have a distal taper and tapered tang. The handles are made from sealed Australian hardwood for a secure and comfortable grip. There’s also a custom Saya to protect the chef’s knife when not in use.
