JonasHeinemanI can say from experience, the black coating reduces the cutting efficiency. It produces friction while cutting through materials. Not a huge deal if you are opening cardboard boxes but if you are working with wood, not great. I removed the coating from all my ESEE knives, same great knife but without the PITA coating and a tad more maintenance.
CampCatskillExactly. I wish they made more uncoated blades. I understand why they coat them, but it doesn't lend itself to wood working like you said, and slicing meat can be a bit of an ordeal sometimes too.
