Founded in Tel-Aviv, Israel, and based in Barcelona, Spain, Florentine Kitchen Knives draws on experience from around the world to craft its cutlery. This knife is the third in the company’s line of kitchen knives, and features a different shape than previous iterations. Crafted with versatility in mind, the blade features a wide profile. It sits relatively high atop the cutting board to give your wrist a nice rocking curve towards the edge, especially comfy for pinch grippers. Featuring a full flat grind, the knife is beautifully balanced for a natural grip in the palm—and it’s plenty big enough to slice through large cuts of meat and stubborn veggies alike. The handle is made from stabilized leather and Iroko wood. At checkout, you’ll have your choice of three different blade steels. See below for more details.

This new grade of steel is just as hard as the previously highest achievable hardness without changing the microstructure, which means the blade is easy to sharpen, too.

Carbon Steel

Made from NJ Steel Baron's 52100 steel—a high-carbon steel with superb edge retention and toughness—this knife will stay sharp for a long time when slicing and chopping up ingredients. Originally developed as a ball bearing steel for aviation, it’s proved to be a great kitchen knife steel over the years, and has only improved with advances in heat-treatment technology. Because it is a carbon steel, it will require more maintenance to keep from corroding. It has an initial layer of protection thanks to the patina, but will darken over time.

Folded Steel

This blade was created with a special combination of 52100 carbon steel at the core and an AISI 410 exterior—made exclusively for Florentine Kitchen Knives by NJ Baron. The result is an aesthetically gorgeous and highly functional blade that will stand the test of time if cared for properly. Because it is a partially carbon steel, it will require more maintenance to keep from corroding. It has an initial layer of protection thanks to the patina, but will darken over time.
