I really need a glass cooking surface-compatible paella pan, but they need to be especially flat to work. Haven't heard if this is ok.
profschmidMatfer's website says nothing I could find. But people claim the fry pan is very flat and does not warp, being good for glass top stoves. Not sure if that helps.
profschmidI don't have this particular pan, but am considering it to fit in a Wolf countertop oven.
BUT, I have three other carbon steel pans--2 Mauvel and 1 deBuyer--and one of my favorite things about them is how absolutely flat they are on my glass cooktop, which I hate, but am stuck with for now. I even use cast iron on the cooktop without issues, but the carbon steel is much better in this regard. --For some reason, I seem to check this every time I use one of them, probably because my cast iron griddle is so uneven.
