Having been in the cooking industry since 1830, Mauviel has earned its place in the homes of amateur chefs and professional kitchens around the world. And the French company certainly knows a thing or two about crafting high-quality equipment. Made from 90-percent copper—which is 10 times more conductive than steel—and 10-percent stainless steel, these saute pans are fit for hot and steamy kitchens. The copper exterior heats evenly and much faster than other metals. The stainless steel interior preserves the taste and nutritional qualities of the food. As far as shape, the pan has high enough sides to prevent splatters, but low enough to reach into with tongs. Pair that with a cast stainless steel, stay-cool, iron-electroplated handle and you’ve got a pan that will stay hot without overheating at the handle section.
