What's the difference between this and the Viking Professional 5-Ply Fry Pan seen in this drop: https://www.massdrop.com/buy/55059 I picked up the 8" and 12" version of the Viking Professional, now I'm curious what the difference is and if one is "better" than the other.
ecoutuThese have an anodized aluminum exterior while the other 5ply you mentioned does not. The exterior is still magnetic so these will work on induction cooktops. PogesIt's a frypan made from aluminum and stainless steel--I own AllClad and Calphalon TriPly pans that are much the same, and I use them all the time for broiling. I wouldn't use them to roast anything simply because they are frypans, not roasting or sheet pans.
One caution, though: I wouldn't wash these in the dishwasher, despite the claim that they're dishwasher safe. A couple runs through dishwasher cycles, and you'll begin to lose that anodizing. I had a friend take the anodizing completely off a Calphalon Windsor sauce pan that way. The pan's still good, but there's no protection from the anodizing to stop reactions with problematic foods like tomatoes. Wouldn't be as big a problem with this pan, since the interior is stainless, but it'll eventually wreck your finish.
