To guess where the Osprey from Artisan Cutlery gets its name, you only need to look at its large modified-sheepsfoot blade. Shaped like a huge claw (which the fish-eating bird uses to devour its prey), the blade makes quick work of slicing tasks with little effort. And because it’s made from D2, it takes a good edge. The Osprey’s handle is composed of G-10 with a strong liner lock to prevent accidental closure. The ceramic ball bearings, in combination with the flipper tab, make the knife super easy to open—not to mention the heft of the blade helps it spring open as soon as you overcome the detent. Go for the curved G-10 for a fuller feel in the hand.
