Made in Japan, this kitchen knife features a blade made by Kanemoto from VG-10 Damascus steel, which is known for its edge-holding ability. The hammered texture on the flats gently transitions to the classic Damascus pattern towards the blade edge Read More
I bought 2 of these and gave one as a gift. Still going strong for 3 years and really wish I can buy more. The knife is sharp out of the box (yeah yeah, it can always be better), very well balance and the fit and finish of the handle is superb.
Good knife for the price point, starting edge wasn't great
Beautiful knife. I did not have any problem with the handle, and there were no protrusions at the tang or handle mounting. Starting edge wasn't great, but now after seeing a sharpening stone its cutting like a dream. Have used mostly on vegetables soft and hard, and it has no blade rollover or any dull spots on the edge. Most knives I've used would at least need a honing bar by now, but I just got through a batch of young bamboo (very soft, easy to tear) with perfect cuts. Great knife for the price.
Really, though, sharpest knife I've ever used, and the handle smells great too. It takes basically no effort to cut tomatoes, and looks great. I did not experience any issues with the handle or protruding tang that others have described. I suppose I will know more about its edge retention after several months of use.
The knife has arrived very sharp, and feels well balanced in kitchen use. The handle of the knife does not feel as well put together as either the Shun or Miyabi that share the knife block.
To be clear, I'm very happy with the blade.
Nice knife. Good specs. Very well priced.
A few quality control issues;
The tang and the scales are a bit rough, lack of proper polishing, in fact the tang was protruding ever so slightly on some spots.
The grind on the blade reflects the price.
very sharp out of the box despite this.
It arrived incredibly sharp out of the box. To be honest, it could use a quick touch up with a very fine stone -- such as #6,000 -- but absolutely usable from Day 1. Gorgeous knife, handle feels nice, and perfectly balanced for a pinch grip. I wish this were a line of knives -- I'd buy a 4" utility and a Nakiri from this line in a heartbeat.
