AUS-8 stainless steel is traditionally used in folding knives, but it makes a strong play in the Mizu chef’s knife. Featuring an 8-inch blade that can just as easily slice through a side of beef as it can mince garlic and chop onions, this all-purpose edge is ready for any meal. The handle is relatively wide for a hand-filling grip. It’s made from G-10—also commonly used in folding knives—and rounded on the sides for comfort. The bolster of the knife is slightly tapered for a comfy, chef-recommended pinch grip. Also included is a microfiber towel to keep the satin blade clean and pristine. If you want something with an even more impressive edge, upgrade to the 67-layer VG-10 damascus version with a rippled blade to help food slide off.
