Pinewood Derby
As the origin story goes, the first lapsang souchong was produced when a visiting army had no time to wait for the tea leaves to dry, opting instead to smoke the leaves over pinewood fires. Developed with a similar process and sourced from the original Wuyi region in China, this tea loses some of the heaviness of other smoked teas, but retains the tarry character of its predecessors.

Steeping
- Steep 3/4 tablespoons in 12 oz of 212º F water for 2 minutes. The leaves are good for 4 more infusions, but add time to each subsequent infusion.
