Does anyone know if the wooden handle is modular?
It doesn't seem very practical if not, because I often start on the range and end a dish component (proteins typically) in the oven for a more gentle heat (steaks, chicken, duck, etc.)
seanstewartThe wooden handle is not removable. It does however work in the stove. From Combekk " Brazilian wood handle cannot be removed and then put back on. It was designed, however, to function not only on a stovetop but underneath a broiler and on a grill/bbq, as well (due to the longer lenth of the handle)." additionally "we caution the handle from direct exposure of the heating coils/gas during broiling. The length of the handle makes it easy to slide the pan under the broiler without compromising the integrity of the special wood handle. Almost all broilers are built into the top of any oven about 4-6” deep/inside so our design allows for the pan to cook underneath the broiler without damaging the handle directly."
kstokleyThat's all well and good if you want to use it in a "commercial" style broiler. But if you just want to use the pan in regular electric or gas oven like most people have (with the door closed), it looks like you're out of luck.
seanstewartWas going to say I don't really see the point of a cast iron pan with a wood handle you can't remove. It takes a versatile style of pan and makes it non-versatile.
