Very nice knife overall, I'm quite happy with the purchase.
Personally I would prefer a slightly thinner blade, and will probably thin it at some point myself, but that's a personal preference, not a knock against the knife.
Was initially put off by the convex bevel, but after talking it through with the company reps, and giving it a chance, it was nothing to worry about.
Seriously the sharpest "factory edge" I've ever received on a kitchen knife, and it's held up well so far.
Fit and finish of the handle and saya are above par for most Japanese kitchen knives I've seen as well (in this price range at least)
It's quite heavy and substantial. Materials and finishes are nice. Package is outstanding.
I would expect it to be sharper out of box. It comes nowhere close to Hanging-Hair-Test and can barely slice thin paper.
I guess, we'll see how sharp can it really get. I am still thinking about the geometry - I want it damn sharp, even if I have to sacrifice some edge retention. On other hand, I never worked with ZDP-189. Not sure how low angle it can safely take. 10 dps?
15 dps is plenty steep for this knife as you stated. In my experience with sharpening, ZDP-189 is the best steel I’ve ever seen at maintaining a highly polished edge. I have sharpened and used the hell out of it at up to .01 micron mirror polish with a KME system and it holds it’s sharpness a very long time. If you have the equipment, take it to high polish. I sharpen mine to 15 dps per side and if I wave it around too quickly I run the risk of ripping a hole in space-time.
Nice knife but did not come sharp and it's very difficult to get sharp
Nice knife, great steel, and an excellent price! Unfortunately mine did not come sharp. Failed the "butchers test" on the hairs at the nape of my neck — no bite at all, just slid down. And with and HRC of 65-67 it's a tall order to get an edge on it. Need an expensive diamond or Cubic Boron Nitride Sharpening Stone — in addition to a fair amount of sharpening skill. So I would say it's only for those who are expert with knives. Oh, and the sharp edges on the top of the blade make it uncomfortable for a palm assist for hard to cut thru veggies like a big Kabocha squash.
Excellent knife. It comes with a bandaid which was nice because I got drunk and tried to make french fries one night and ended up needing it because this thing came extremely sharp.
Cant say enough good things about SharpEdge. Please give us more knives. But not knives to slice Jabugo, as I dont have the space to store either the Jamon or the knife
I’ve always wanted to try a ZDP-189 kitchen knife, being a fan of it in folders, and SharpEdge did not disappoint. The knife is well-crafted, and fills a nice, all-purpose, niche between my AS Moritaka 240mm Gyuto and 150mm Petty. Fit and finish is great and even matches my kurouchi and walnut & horn wa Moritakas. Will it chip if used improperly? Sure. Will it offer laser performance if you maintain it properly? Yes. Know how to use the right tool for the job, and how to take care of it, and you will not be disappointed.
I fell in love with the shape of the knife. Bunka. This was the first time I experienced a sharp knife. It is life changing. Didn't come with the sheath (saya), but I ordered it off SharpEdge's website, got here very fast. Buying this here and that there was cheaper than getting it from SharpEdge only. Very happy.
